For hundreds of years Venice’s Arsenale was the ship-manufacturing centre of the Adriatic. At the height of the Republic’s power in the 16th century this was the biggest shipyard in the world, employing 16,000 people and able to turn out a sea-going vessel in 24 hours. Venice relied totally on her formidable sea-power, which defeated the mighty Ottoman Empire at the Battle of Lepanto. Most of the Republic’s ships, however, were for merchant traders. The Venetians were among the first planners to “zone” their city, putting all industry into the eastern end of the island complex and bestowing on it the Arabic word “darsin’a” for a house of industry. The workers in this immense production line were accorded special privileges in Venice. They carried the doge around the Piazza San Marco after his coronation and acted as pallbearers in ducal funerals. Napoleon destroyed much of the Arsenale after conquering the city, but it was reconstructed during the Austrian occupation (1815-1866). Today, it is a centre for maritime technology and not open to the public, but its historic gateway – the first piece of Renaissance architecture to be built in Venice – is visible. There is also a good view of the complex to be had from the bridge connecting Campo Arsenale with the Fondamenta dell’Arsenale. The “House of Gold” is a Gothic jewel of a palace facing the Canal Grande. Built as Ca’ Contarini in the 15th century it is one of the oldest palaces in Venice and has for centuries been known as Ca d’Oro because of the rich gilding and polychrome external decorations with which the facade was originally covered.

What Is Involved With Therapy Dog Training?

Many people are familiar with seeing-eye dogs or assistance dogs, those that directly help persons with disabilities. Seeing-eye dogs are assigned to those that are blind whereas assistance dogs may help those that are deaf, in wheelchairs, or who have any number of other disabilities. Beyond a seeing-eye or assistance dog, healthcare professionals are now appreciating the assistance of therapy dog training, which is something different than assistance dogs. Therapy dogs do not necessarily provide any specific help the way seeing-eye dogs or assistance dogs do, but rather are meant to provide comfort and companionship to those in wheelchairs, assisted living facilities, hospice care, and so on. Therapy dog training doesn’t include the training of dogs to guide their owner through traffic and crowds or to respond to doorbells and other sounds the way it would be for assistance dogs. However, therapy dogs are not just any old dog and there is some specialized classes needed for therapy dog training. Many dogs are very uncomfortable around strangers, children, and those who are in wheelchairs or who have canes, crutches, and the like. Part of therapy dog training involves socializing the dogs with those who need such assistance or who have such medical equipment. They also need to be comfortable with those that pet them rather clumsily and must be able to hold their composure when this happens, as those that are disabled or the elderly do not always have the best mobility. Another part of therapy dog training is teaching the dog to crawl up on laps or onto beds so that they can be in close contact with their owners who may be bedridden or unable to sit on the floor with them. This is something new to most dogs, which are often taught to get off their owners and to stay off the furniture! Having a dog unlearn some things it’s learned before can be a difficult part of therapy dog training but it can be done. Not every breed of dog is a candidate for being a therapy dog. Only those that are very friendly, calm, gentle, and open to strangers can even begin to approach therapy dog training. Typically golden retrievers are very good candidates as they have great temperaments that make them perfect for being companions to some. Dogs aren’t the only animals that are good for therapy companions. Some have also found that rabbits, cats, ponies, and animals such as this work well also. Of course it’s important to realize that not everyone can have a therapy pony! But if they’re gentle and open to human companionship then these animals too can go through the same type of socialization that therapy dog training includes. If you’re looking for a way to really make a difference in someone’s life you may want to consider if you have a dog that would be successful at therapy dog training. They can be very comforting to those who need them most.

All liver is a great source of iron and B vitamins and should be a regular part of a healthy diet and if cooked correctly liver can be delicious. Although liver does have bad press and many people will not even consider trying it. Sometimes it calls for the cook to be somewhat inventive to get people to try liver. There are many recipes to choose from and it is worth the experimentation.

The best liver is the liver from young animals as it is mildest and tenderest. Calf’s liver is delicate and delicious but fairly expensive. Real calf’s liver is paler in color than the redder more mature baby beef liver. For a mild flavored liver choose the palest that you can find. The darker the color the stronger the flavor.

Take care when choosing liver as sometimes baby beef liver is labeled calf’s liver in the supermarket or grocery store. To ensure purchasing true calf’s liver buy from a butchers or a reputable gourmet supermarket.

Baby beef liver is stronger in flavor than calf’s liver but is very good and preferable to actual beef liver. Liver from beef is dark red and the color corresponds to the strength of flavor. Beef liver is readily available but many believe it is too strong for simple preparations.

Some cooks after buying beef liver soak it in milk or a flavorful spicy marinade such as a white wine marinade before cooking to soften the intense flavor. After marinating throw the liquid away and pat the liver dry before cooking.

A lovely tender well-flavored liver is lamb liver but this is generally quite difficult to find.

Also hard to find is pigs liver, which is strong in, taste but extremely tender. Again for pig’s liver it can be soaked or marinated like the beef liver.

When choosing liver it should be impeccably fresh with no slimy or dry patches and should have a clear scent.

Should you find yourself preparing a whole liver first wipe it with a damp cloth, then with a sharp knife remove any exposed veins, ducts or connective tissue. With your fingers peel away the thin outer membrane without tearing into the liver itself. You then just slice on the diagonal to the desired thickness your recipe calls for.

Of course presliced liver can be purchased and is actually more commonly available than whole livers. If the butcher has not done so remove the outer membrane on the slices.

Before cooking make 1/8th inch cuts at 1-inch intervals around the outside of the liver slice. The reason for this is because liver has a tendency to shrink and curl when it is cooked and these cuts will help to prevent that from happening.

The liver is now ready for cooking. Liver should be cooked until it is pink but firm in the center. If liver is overcooked or cooked on excessively high heat it will toughen.

Liver is a lot richer in flavor than many other types of meat so a 4-ounce serving should be ample as a main course for most appetites.
