A Good Credit Score – Do You Have One?

There are many confusing and conflicting criteria for determining where you fall on the sliding scare of credit worthiness in our plastic society. And quite frankly, as I write this in late 2007, what you can get approved for today is VASTLY different than what you would have qualified for even 1 short year ago. But the good news is that most of the basic benchmarks have stayed the same for most of mainstream Americans, so unless your score is VERY high (in which case you probably have other worries in life than money. :-) or VERY low, wherein even liberal lending policies weren’t really helping…the following is a pretty simple guidepost for where you will find yourself in the loan approval process. If your score is in the 700′s – you are in good shape as a general rule. 720 and up is almost ALWAYS A grade paper which means you should qualify for the best rates amongst many mainstream lenders. Occasionally you will find recent lending restrictions have bumped this up a LITTLE bit. But just shop around. The high and mid 600′s is where most of the recent credit crunching is going to hurt. This used to be considered A-, which means you would possibly pay a point or two depending on your employment history, etc…But today, right now in December of 2007 you might find some lenders will disappoint you even here. Anything significantly below this and you will start to be commoditized….The average score is a mid 600 – depending on the source of info, anywhere from 640 to 680. Don’t worry, you WILL get funding here – but, you MIGHT want to wait a little bit longer until the housing market corrects before jumping in. It’s a volatile time to sell, that’s for sure – I know myself because my home is on the market! Good luck and don’t forget to ask if you have any more questions!

Coq Au Vin – Julia Child’s Version of This Classic Chicken and Red Wine Dish, Except a Little Easier

Coq au vin, pronounced kohk-oh-vahn, is a very classic French dish that includes chicken, bacon, wine and a few other ingredients. The one and only time I had this dish I remember that I wasn’t super impressed. I was even eating it in France, prepared by a real French person. Nevertheless, when I saw it again in one of Julia Child’s cookbooks I decided to give it a go. Mainly because, God bless Julia, it looked easy to prepare.

One of the reasons, I believe, that Julia was so wildly successful was that she explained everything in grand detail. She really makes you feel like, yes, I can do that too! So when I reread the recipe I wanted to try it. However, sometimes even Julia went a little over board with her directions, so I thought about how I could make this still true to form but just a little simpler, and of course, faster. What turned out was an excellent version of coq au vin, if I don’t say so myself. I found the sauce to be so fantastic I almost wanted to drink it. This is my version, but if you would like Julia’s you can find one in The French Chef Cookbook, p. 76.

- 4 slices bacon, cut into matchsticks
- Cooking oil
- Frying chicken, cut into pieces
- Salt and pepper
- 1/4 cup cognac or brandy
- 3 cups red wine; Julia suggests Burgundy, Chianti or California Mountain Red wine; I used a Chianti
- 3-4 cups beef stock or bouillon
- 1 Tbsp. tomato paste
- 2 cloves garlic, minced
- 1/4 tsp. dried thyme
- 2 bay leaves
- 1 large onion, sliced thick
- 1/2 lb. mushrooms, cleaned and quartered
- Butter
- Flour

In a large, deep skillet or Dutch oven, saute bacon with 2 Tbsp. oil until browned. Remove bacon, leaving fat. Season chicken with salt and pepper on all sides. Over medium-high heat brown chicken on all sides in the bacon fat. When chicken is browned return bacon to pan, cover and cook over medium heat for 10 minutes, turning chicken once. Uncover, pour in brandy, and light with match. (Be careful! Flames will come up from the dish!) Shake pan back and forth until flames subside.

Pour wine into pan, and add just enough beef stock to cover chicken. Stir in tomato paste, garlic, thyme, and bay leaves. Bring to a simmer and cover. Simmer for 30 minutes or until chicken is tender when pierced with a fork. If chicken was not fully covered by stock turn chicken once halfway through cooking. While chicken is cooking, in a large skillet saute onions and mushrooms with 1 Tbsp. butter and 2 Tbsp. cooking oil until lightly browned and tender.

When chicken is done, remove from pan. Skim off fat and boil down to concentrate flavors. While sauce is boiling, in a separate sauce pan melt 2 Tbsp. butter. When butter is melted add 3 Tbsp. flour, whisking until incorporated. Add butter and flour mixture to sauce, whisking well. Bring sauce to a simmer and cook until thickened. Off heat add mushrooms and onions to sauce. Taste and season with salt and pepper if needed. Add chicken back to sauce. Serve as is or with rice, noodles, or potatoes. If making this ahead of time, when reheating simmer chicken and sauce on low until chicken is just heated through. Do not boil, chicken will overcook.

Bean soup is an excellent source of protein, and is also a very healthy recipe that you might want to try. This is a delicious dish that you can serve to anyone, especially for vegetarians who need to increase their protein intake. When preparing bean soup, here are some cooking tips that you should keep in mind.

Choose carefully the kind of beans that you are going to cook. As you already know, there are different kinds of beans that you can choose from when you want to make bean soup. Black beans are popular for Latin American, Cajule and Creole cuisine and are also excellent for soups. Asian recipes usually use the red beans. If you want, you can try the different red bean soup recipes of Koreans, Chinese, Japanese and Vietnamese. They all use red beans but there is a difference in the seasonings and the consistency of the soup. There are a lot more kinds of beans like shell beans, white beans, chickpeas and several others. There are also mixed beans that are sold in packs and you could also try them out if you are in the mood to be creative.

Soak the beans before cooking. Dry beans should be soaked before cooking so that it will take a shorter time for them to be cooked. Aside from shortening the cooking time, soaking also makes the beans more digestible. There are two ways on how you can soak the beans that you are going to use. For normal soaking, this will take at least 8 to 10 hours but it will take a longer time for the larger ones. What you do is to wash the beans at least four times and remove any debris. Cover the beans and get back to them when you are ready to make your bean soup. This is a healthier choice and is the one that is traditionally done. When you don’t have much time for soaking, what you do is to bring the beans to a boil for one to two minutes. Afterwards, let it sit for at least one hour before making the soup.

Cook the bean soup with enough amount of water. The amount of water used in cooking bean soup is important so that it will turn out deliciously. Whether you are using fresh water or the soaking water, you should see to it that the water is twice the amount of the beans. When cooking bean soup and you want it to have a darker coloring especially when using black or red beans, you will have to use the soaking water. You do have to make sure however that you have washed the beans properly before soaking.

Add salt and other seasonings when the beans are already tender. There are times when because you are rushing, you add the ingredients of the bean soup even when they are not yet tender. However, the salt and the seasonings can disrupt the cooking so they may take a longer time to cook and the flavor will not be that good. So wait when the beans are already tender before you add any other ingredients especially salt.

Keep these simple tips in mind when making bean soup and surely, you will make the most delicious soup for you and your family.

You will eventually learn how to get rid of heartburn in your dog by trying different types of meals. As a rule, as your pet ages, the incidence of heartburn should decrease, because older dogs no longer produce a lot of stomach acid.

Oftentimes, farmers are given less priorities by the government in giving grants and aids in infrastructures and other economic benefits. Actually, without them the economy of the country is doomed to fail. The government should provide them irrigation facilities, post harvest facilities, farm equipments, farm to market roads, fertilizer and seed subsidies and assist them in marketing their products.

When the farmer becomes rich, the nation will also become rich. If majority of the farmers in a country are rich, then the economy of that country will rise due to higher tax contributions. These farmers could be rich if the government supports them their farm inputs needs and necessary infrastructures with complete facilities in irrigation or post harvest.

We can observe some of the rich countries in the whole world such as United States of America and Japan. Their farmers are well supported by their governments in their farming needs. The farms are highly mechanized from land preparation to harvesting to post harvest activities. Marketing of their products is also well supported by the government. In return, it adds more income to the nation and leads to better economy. It becomes exporter of processed agricultural products and even fresh farm harvest to other countries.

The government should provide the farmers with subsidized hybrid seeds for rice, corn, vegetables ad other crops which result to higher yields. Irrigation and post harvest facilities should be provided for free to the farmers. Farm tractors should be procured by the provinces and operate the land preparation to the farmers’ croplands as subsidies and assist them the proper technologies in crop production until marketing aspects.

National and local executives should be aware that without farming, economy of the nation will fall. Farmers should be considered the national heroes in uplifting the nation’s economy.
